Ingredients for 4 people:

500 g aubergines

200 g flour

100g of mortadella Noa Feudo Sardo

3 ripe tomatoes

100 g. of fresh sheep cheese

80 g of grated pecorino cheese

½ liter of tomato sauce

Extra virgin olive oil





Slice the aubergines in the direction of the lenght, salt it and let it rest for about an hour.

Peel , chop the tomatoes, then sear it.

Dip in flour and fry the aubergines, then, when the oil is drained, put on each slice a slice of mortadella, a chop of fresh cheese and one of tomato, salt and pepper.

Roll up the aubergines and close them with a toothpick.

Place the rolls in a baking dish, add the tomato sauce and the grated cheese.

Bake it at 180° until the surface become crispy.

Suggested wine: Carignano del Sulcis.
